Made similarly to hash browns, mashed potatoes are mixed with eggs, breadcrumbs, parmesan and seasonings and fried until golden brown and crispy. The result? Ingredients for the potato pancake
- Potatoes: For best results, use Yukon Gold, russet potatoes, or russet potatoes; these will give you the fluffiest potatoes with a crunchy texture.
- Eggs: use large, free-range eggs.
- Herbs: Fresh parsley adds flavor; can be replaced with coriander
- Oil – use a neutral oil suitable for frying
- Seasoning: All you need is salt, pepper, and garlic, but feel free to use spices in the recipe or create your own mix. You can also use store-bought blends, such as fajita or taco seasoning, Italian seasoning, or Cajun spices.
- Parmesan – adds flavor
- Breadcrumbs and flavor: together they act as binding ingredients
Suggestions
You may be tempted to use a hand blender or food processor to puree the potatoes, but that’s not recommended for this recipe. The potatoes may be soft, but they will also become sticky and have a tough texture. Instead, use a fork or potato masher to mash until smooth.
Let the potatoes cook a little until they are completely dry. They should be as dry as possible.
Add your favorite spices to the mashed potatoes: paprika, Cajun or taco seasoning, white pepper, or even fresh herbs.
Add crispy fried bacon bits for a smoky, meaty flavor.
With this recipe you can also make croquettes. Bread the mashed potato sticks with flour, eggs and then breadcrumbs. Fry them or bake them in the oven at 200°C for 15 minutes until cooked. Fill the croquettes with bacon or cheese.
Drain the potato pancakes on a plate lined with absorbent paper to prevent them from being too greasy.
To ensure they are cooked evenly, use a cookie scoop to measure out equal amounts of the mashed potato mixture.
How to store potato pancakes
Potato pancakes can be stored in the refrigerator for up to 5 days. Simply reheat them in the oven or Airfryer for 10 minutes as they may get soggy in the microwave.
Can you freeze potato pancakes?
You can also freeze them in the freezer for up to 3 months. Place raw potato pancakes on a baking sheet and freeze for about 2 hours. Transfer the pancakes to a Ziploc bag and freeze for up to 3 months. Cook directly from frozen.
Can I make potato pancakes with the Airfryer?
To make hash browns in the Airfryer, lightly coat them with cooking spray. Place them in the Airfryer basket and air fry for 12 minutes at 400°F. You can also cook them at 400°F. Turn on the grill for the last few minutes to ensure extra crispiness.
